| This was taken at Bumble Bee Cannery in 1977. Retorts are the barrel-shaped chambers, used for sterilization by heat in the canning process. Note that at least one retort, second to the right, is venting steam. The devices that look like clocks (up on the wall, above the retorts) recorded what was going on inside the retort. The cans stayed in the retorts for approximately 90 minutes - similar in this respect to home canning of salmon. A recording device produced a paper graph, documenting the cooking process. |
